Coconut Poached Sea Bass
Ingredients:
2 Sea Bass filets
Salt liberally while bringing to room temp (I let my proteins sit while I prepare my other ingredients) Halibut is a cheaper alternative fish to use. We got a hook up with the Sea Bass.
Poaching liquid:
1 can coconut creme
1 can coconut milk
1 TBL fish sauce
zest of 1 lime (save a pinch of this*)
3 TBL brown sugar
2 cloves garlic (halved and thrown in)
Fish "crust":
pistachios (I used a single serving bag)
1/2 tsp whole Coriander seeds (a little goes A LONG way)
Toast pistachios and coriander seeds. Grind in spice grinder.
Fish Topping:
1 Tomatillo
1/2 avocado
1 yellow tomato
1 red tomato
Salt to taste
white pepper (pinch)
1 TBL olive oil.
1 TSP fresh lime juice
Pinch of lime zest (*zested earlier for the poaching liquid)
Dice as finely as you can: tomatillo, tomatoes and avocado (hint to place avo in freezer prior to ease cutting. Don't freeze it! But make it very cold).
Add in bowl with olive oil, white pepper, salt. Zest, etc. Mix gently! Let marinate in fridge while you cook.
Instructions:
Bring poaching mixture to a boil, stir occasionally, then bring down to a simmer. Add fish filets. Cover! Cook 6-8 minutes. (Filets I used were approx 1-2 inch thick)
(I like to check in halfway and spoon poaching liquid over top of fish). Cover again and remove fish immediately after 8 minutes. Should be perfectly cooked after resting. (3-5 minutes)
Melt 3 TBL butter so Ground pistachios/coriander can adhere to top of fish. Glaze butter on top of fish after resting. Dust pistachio/coriander mix to coat and top filets. You will need to "sift" this through a fine mesh strainer as some pieces will need to be caught)
Your choice of side with fish. I think roasted sweet potato would be wonderful.

This seriously sounds like it's all over the place, cuisine wise! But it works! My boyfriend was like, uhhh. I don't know about all that when I told him I had this in my head for years and never tried it.
After he had the fish, he said it was the best piece of fish he had ever eaten. So...there's that. He also dislikes coriander and tomato with fish and he ate everything. So flavors work together. Proceed at your own risk![]()

Used a large sweet potato for the cream cheese pumpkin bread recipe and left out the sugar entirely. It's in the oven now; hope this works.

Carrot apple bread. It smelled amazing, but I guess it was too moist, or too dense, because even though it was perfectly cooked on top, it was soggy and undercooked on the bottom. Will probably end up chopping off the entire bottom of the loaf tomorrow.

It was a fail for me too. I didn't use a crockpot though. I tried to rice it in a blender and then thought since it looked like mashed potatoes, maybe it could be.
Got a programmable 6 qt slow cooker. Making some BBQ Ribs from a Pillsbury recipe, but I'm using a "Steakhouse Marinade" I found on the net. I should be able to get the ribs in the cooker by around 6 pm and they'll be done at 2:00 am. Doh!
