Good call on Can't Help Falling in Love, I was thinking about that one, too.
No version of "I Heard It Through The Grapevine" is better than the original, but there are a lot of very decent covers, as well. I particularly enjoy the reggae-punk version by The Slits.

Alternatively, I'd consider the Beatles covering the The Isley Brothers covering the Top Notes.
Dave Matthews Band does a nice cover of the Jimi Hendrix version of All Along the Watchtower.
