Whaaaatcha got that needs using? :3 You could always put it in the graveyard drawer of the fridge. That's typically what I do with my super-well-intentioned greens.

Todays eatings:
- A bowl of cereal
- A bite of a custard cake
- A bag of cherries
- A peach
- 2 plates (lunch and dinner) of vegetarian tacos... wheat tortillas, sour cream, fruit seasoning, a saute of garlic onion and bell pepper for the 'meaty' portion of it, pickled jalapenos, lettuce, green onion, homemade salsa (cherry tomatoes, onion, garlic, cilantro, lime juice), avocado, hot sauce.
- A small piece of chocolate

Topped off with a great cardio work out and 30 minutes of stretching.

The veggies and fruit I was having the most trouble with were: kale, chard, plums (yellow, not nearly as tasty as red IMO, and apparently not the kind you should cook), and beets. The problem was not so much the ingredients, as the quantity of them, and the time I had available. I've been making myself eat two plums a day, just to get rid of them. I made beet chocolate chip muffins (yum!!) and roasted the rest to make beet/goat cheese grilled cheese sandwiches with (double yum!!!), using the kale as the sandwich green. I cooked the chard into a crustless quiche with swiss cheese.

This week, I got the following from my CSA: watermelon, nectarines, kale, grape tomatoes, bell peppers, green beans, fresh garlic, and corn.

My plans for the food thus far:
- Shell pasta, with the corn and leftover CSA pattypan squash from last week
- Baked eggs with CSA tomatoes from last week, CSA potatoes from two weeks ago, and this week's kale
- Watermelon for dayssss (maybe with lime juice and chili powder and salt? my CSA sent us a recipe for that and it sounded marvelous)
- Sesame cucumber tahini soba noodle salad with an almost-bad CSA cucumber from last week (I don't like cucumber unless there's a ton of extra flavors to balance it out)
- Nectarines, plus last week's peaches, sliced and served on full fat Greek yogurt for breakfast in the morning
- I found this cocktail that uses ginger ale, peaches, and bourbon... :ninja:

No friggin idea what to do with the green beans. I have a LOT of them. More than two cups. I also have a ton of bell peppers now, but they keep well in the fridge.

First: watermelon. Amazon.com : Valentina Fruit Seasoning 140 Gr : Mexican Seasonings : Grocery & Gourmet Food They are typically muuuch cheaper ($2-3) in grocery stores with decent Hispanic sections. You will not regret that stuff.
MORE KALE! :laugh: I think the stuff is super bitter.. things you can make: cupcake smoothies in the freezer and quiches help.. Kale basically can get thrown into anything.. sandwiches, soups ( like this one: Cool Down With This Green Goddess Summer Soup - SELF ), dips, you can dehydrate it into chips.. all kinds of shit. The chips are cool because you can make them in batches while making other recipes and the dehydration means they'll last bit longer and they'll taste even better on sandwiches. I only made them once, but sticking some kale chips onto a mustard cracker with a piece of cheese on top was pretty damn tasty. I'm not a big fan of kale but my bf eats it raw.

also, you SO can cook yellow plums! But, much easier: chia seed jelly. Take any pits out of fruit (plums + nectarines would be perfect for this) and get yourself 2 cups worth of it, add 1 tbsp of sugar and 1 tbsp honey, 1-2 tbsp lemon juice, and 2 tbsp chia seeds. give it a whirl in a food processor or blender until well combined, and you've got something to slather onto bread, cake, waffles, etc once the chia seeds plump it up into jelly goodness. you gotta stick it in the fridge overnight.. it looks watery at first, but firms up eventually. Any bread, jelly, and cheese go together.. ANY. So, there's a lot of ways to eat this.. and, if you mix in a bit of horseradish it makes a good chutney for meats or appetizers as well.

Green beans are easy to freeze so those are easy if you don't finish them up in time. :) Green Beans with Horseradish Panko Crumbs | The Beach House Kitchen they're pretty awesome because, while you don't normally think to toss them into salads and stuff, they don't have much taste fresh.. very watery veggies.. so they go really well in, for example, a tossed salad of carrot, green bean, celery, and insert-a-sauce-of-choice-here. And, they're really just great side dishes on their own right.. green beans with a bit of lemon pepper and smoked paprika is pretty baller.

And bell peppers + garlic + grape tomatoes? I just had this same combination.. add some mushrooms to this pot and you've got yourself a taco tuesday. Chopped up onion, bell peppers, and mushrooms.. cook in garlic and some taco seasoning until the peppers are softened but not totally wilty. Warm up tortillas, and use the grape tomatoes with some jalapeno, garlic, onion, cilantro, pepper, hot sauce, and lime juice to make a quick pico de gallo, or blend it for salsa. Kale can be the shredded lettuce in your case. :laugh:

Example Kale dip: Cook one bunch of kale (stems and ribs removed) in 1/4 cup water with 1 small sliced onion and 5 cloves garlic until tender. Transfer to a food processor and add 1/4 cup cream cheese, 1/3 cup sour cream (more if you want it creamier), 2 tablespoons shredded parmesan cheese, the juice of one lemon, salt and pepper. Process until smooth and then transfer to a serving bowl and gently stir in 1 (8-ounce) drained jar of quartered artichoke hearts. Boom. Awesome dip.. want it more vegetable-y? Stir in chopped tomato. Want a crunch to it? Celery or something similar to it.

- Nectarines, plus last week's peaches, sliced and served on full fat Greek yogurt for breakfast in the morning
- I found this cocktail that uses ginger ale, peaches, and bourbon... :ninja:

Both of these together sounds like a super classy morning.

Osuimono - Clear broth soup that's super cheap, easy, hydrating, and what I ate for dinner along with some zucchini meatballs and sauce.

4-6 cups of water
1 piece kombu (if you cannot find this, it's easily ordered online. Don't wash off that white stuff on it, that's part of the magic.)
A drizzling each of Mirin, Soy sauce, dashi, and sake if you have it.. I don't, so just a bit of salt and couple drops of lemon for me.
Decorate it how you like... dried shiitake mushrooms, or dried wakame seaweed, dried green onion, etc.

Basically let the kombu sit in the water for an hour or so, then bring it to a boil. Turn the heat off, and add the drizzles of things. Then add in the decor, and let it rehydrate. When ready to eat, turn the heat back up again, or eat it lukewarm after it's cooled if it's hot out.

if you ever get backed up, take a tablespoon of olive oil first thing in the morning then right before you go to bed. it won't make poop shoot out of you right away and doesn't taste great on its own but it works.

I'm starting my life again. Started logging my food. Just went out and bought some spinach, tomatoes, plain Greek yogurt, avocados, and skim milk. Slowly ridding my house of desserts. Once school starts back up I'm going to run again.

I have to do this. I'm determined.

Bananas in the fridge + some whipped cream for breakfast with Mugi-cha served over ice was the perfect thing to cure waking up drenched in sweat.

Today is going to be a busy day for fitness. Some running, then some HEMA training, meal planning and grocery shopping too. I haven't been to a full HEMA session in a couple weeks, so I'm a little nervous of the sparring. We'll see how I do. :3

Bought an Instant Pot in an effort to cook at home more. Damn I love this thing! Favorite thing in it so far is dirty rice, but it's easy to cook frozen chicken breasts any number of ways in a short time. Planning to make non-fried "fried rice" in it tonight.

I love mine too. I didn't think I would but I use it at least a few times a week. I baked potatoes in it tonight. I also make oatmeal in there all the time - 8 minutes. Just make sure to grease the inside or it's a mess when you quick release.

Pressuring the cobs makes this soup. It's so good. I got it just as silky smooth with an immersion blender as I did with a regular one so you can use what you have.

However, my boyfriend was highly impressed with my egg cooker.. he thought it was dumb until I made hard boiled eggs and perfectly poached eggs in the time it took him to get the water boiling for his soup. Boom!

Just purchased some shrimp.. I haven't eaten shrimp in a decent amount of time.. I plan on making tacos + shrimp cocktail for dinners, rice and coleslaw and caprese salads for lunches, and fruit with a slice of ice box cake and a big glass of milk for breakfasts. <3 Pretty happy about this line up actually.

I've been using my fitness pal and checked in every day from monday, down side is that I appear to have put on a stone in weight since I last used it, upside is that I'm not wearing larger jeans so it might be muscle replacing fat, every day that I am at the gym its fine, I can finish ahead of goal by as much as 1000 calories but when I dont go to the gym its bad news, sometimes as much as eight hundred or more over goal.

I love this thing so much, I don't think I've done any cooking on my actual stove/oven since I got it. And we've eaten at home a lot more. I use it daily, sometimes twice. I only wish I'd gotten the 8qt so I could batch cook in it. (6qt seems big but you can't fill it all the way for pressure cooking.)
