I don't think INTPs are the only chameleon-like type. ENFJs are pretty well-known in my book for mirroring other people, typewise and otherwise.
I do think INTPs have to act like a chameleon a lot though, simply because Is and Ns are pretty uncommon (not here, but in general), and Thinking isn't so great for relating to the average person naturally (since the average person in Western society is E and/or S and probably talks about people and/or concrete things most of the time). At least that's been my experience.
