Y'all, I made spaghetti squash tonight, and it was THE BOMB. I had tried it once ages ago and didn't care for it, but either my tastes have changed or I cooked it wrong last time. I had it with some uncured turkey smoked sausage, Mario Batali's low-sugar spaghetti sauce, and of course parmesan cheese. Could have used something else besides the sausage for protein, but it was good with it and turkey sausage isn't terrible.

Did you make the squash in the Instant Pot?

No, I had two big ones to make, so they wouldn't fit in the pot. I microwaved them for a few minutes each so they'd be soft enough to cut in half and then baked them for about an hour.

I like that cheesy squash casserole that a lot of good BBQ places make so, we have that often in the summer. I have made smaller squashes in the IP but, it's just as simple to poke some holes and nuke or bake it. This is my only complaint about the IP - I wish it was oval to fit things like this.

I made a pretty bomb ass sloppy joe the other evening. Celery, onion, garlic, mushrooms, carrots, zucchini. Chopped fine in the food processor, sauteed in sauce. I have eaten it for dinner the past 4 nights and it's been awesome every night. Nice large bun, pickled papaya shredded on top, fresh spinach, and a healthy dose of condiments + mexican creme with a pickle spear on the side.

Heh, unfortunately I don't really use recipes but here are some notes:

- No more than 1/2 teaspoon of temari it's VERY strong. Otherwise mix to personal taste.
- Tomatoes and spinach I add the end, just cook until they are soft but not mushy.
- Green onion and cilantro I don't cook at all and garnish on top.

Today I made pretty good bean sauce, which can be eaten alone or you can add something like an egg.

- cook beans in oily garlic water
- add cream
- black papper
- more garlic
- salt

It's super easy and it actually tastes really good!

Vegetable Adobo I made recently out of leftovers:
- Garlic, onion and oil sauteed until soft
- Add in mushrooms of various kinds (I used enochi, basic baby bellas, and shiitake), celery, riced cauliflower and carrot all finely chopped up
- Pour in 1/3 cup vinegar and 2/3 cup soy sauce
- Add in large skinned chunks of ginger (not finely chopped, just literally cut the skins off and make them into large sticks)

Bring to a boil, reduce, and let simmer. If you want a less-strong flavor, boil the mushrooms all separately in a vegetable broth first so that they absorb that flavor/liquid prior to adding it to the adobo sauce.

Let it cook until the flavors are well melded and the ginger has infused and mellowed out the flavor, about 20-40 minutes. Serve with fresh rice.

Idk if anyone suggested it yet but...Parmigiana? You can do it either with eggplants or zucchini. And there are variations too.

Basically you slice them .5cm ca then cover with flour, egg and more flour and fry them (you can also just grill them without frying them). You make a tomato sauce with some oil, onions, basil. You put some sauce on the bottom of a pan and layer everything. One layer eggplants (or zucchini), some sauce, mozzarella or cheese that melts, parmesan, more eggplants, sauce etc... then put in the oven till a bit crispy on top.

It's like a vegearian lasagna :)
