I'm trying to love broccoli because it seems like a good addition to beef, chicken, or fish. My husband told me it was pretty much flavorless so I decided to try the beef with broccoli Atkins frozen mean and it was really good, despite all the additives/preservatives. If I buy it fresh, what's the best way to cook it? In case you hadn't noticed, I'm not a huge vegetable lover, but I really want to be!

its super tasty. I'm on a "I'm poor and I need to diet" diet right now, but I already had the milk and the brown rice so I left those off the list. AND! You can eat broccoli completely raw, I find it delicious that way with some spicy-saucy dressing, but...
The best way, to me, to cook broccoli is to steam it. Steaming vegetables is SO effortless. All you need:
- Glass bowl
- Plastic wrap that is allowed to go in the microwave
- Seasonings (I like this garlic-sea-salt grinder and Mrs. Dash that I got on sale

)
- Water and a knife.
In essence: Cut, water, cover, nuke, rest, eat.
Wash the broccoli (I usually wash my veggies as soon as I buy them, I'll explain it in a minute) if you haven't already. Cut up the broccoli into edible-sized pieces and place them in a glass or microwave safe bowl.
Put a bit of water in the bowl. (I don't really measure how much because it comes so naturally to me now.. but I would try half a tablespoon and adjust from there if you're a measuring type. If you put too much in, all you have to do is pour it out later.)
Now place your seasonings that you want on the veggies and cover the whole bowl with cling wrap. Poke a couple holes in the cling wrap with your knife, and then put it in microwave.
Depending on your microwave settings and how much broccoli you're preparing, it could take anywhere between 3 - 7 minutes in the microwave. As long as it is tender it is done, and usually those times produce reliable results even with frozen foods. I would start with about 4-5 minutes on almost anything, follow the next step, then repeat if it isn't tender enough. Now go on with whatever else you were going to do for the next 5 minutes.
Forget about the broccoli when it stops. Let it rest in that steamy mess for about a minute or so.
Take off the cling wrap, dump out the water if there is too much, and sprinkle the top with some shredded cheese.
Ta-Da!

! The same can be done with cauliflower, they both act in similar ways.
How I wash veggies: Throw a handful of salt in some water and a good slug of vinegar (about 1/4-1/3 cup if I was going to measure it) in a sink of cold water. Give your veggies a good swish in the water and then let them float/sit there for about 30 minutes. Rinse them off with fresh water, drain them, and lay them out to dry on a towel for a while. Pat off any excessively wet areas when they're starting to be room temperature and put them in the fridge. I found this recipe makes my veggies last way longer in the fridge, they don't get those slimy areas nearly as quickly, and any small buggies that would have been on them still from the market will not be clinging to them anymore. You'd be amazed at how nasty that soaking water looks after you're done with it sometimes. You can definitely start to tell which stores actually wash their veggies or not.
