Poor Hygiene is the tendency to feel disgusted by violations of culturally expected hygiene practices. Disgust has been found to be a basic response to stimuli that signal uncleanliness and are associated with the potential for sickness. From an evolutionary perspective, we have the instinct to protect ourselves by staying away from something smelly or stinky, as these stimuli may indicate the presence of pathogens.

Exposure to Death denotes sensitivity to pathogens associated with dying and death. Most people are hardwired to be repelled by organic decay, dead bodies, and situations that indicate loss of life. From an evolutionary perspective, we have the instinct to protect ourselves by staying away from such pathogens by interpreting them as signs of danger.

I'm quite hard to gross out. Ive even picked up dead pets, because no one else would bury them. I don't like it when people intentionally make food look like shit either. The only thing that really gets to me though, is injections/incisions on live things. That bug scene from the Matrix fucked me up as a kid lol. Why I decided against being a vet.

Someone vomited on my leg and it didn't phase me. It's hard to bother me, though hygiene is a lot bigger than this shows.
Also if they were worried about animal contaminants, why are they listing the animals to be places animals normally are (rats outside are... Normal)?

It depends on where you are... where I live, it wouldn't be usual at all to see any rats anywhere. But, even in the big city, where such creatures are more normal, it creeped me out to have some mysterious animal skitter in front of me while I went for an evening walk.
