I know someone who tested as ISTJ, but he recently broke down in tears when he didn't finish a just-for-fun Minecraft build by the end of class. Is it possible that he just input what he wanted to be rather than what he was? He's a good guy, but he's on the more insecure end of the spectrum, so the aforementioned seems possible.

Accuracy depends on many things and being a self reporting system your own self image can obviously colour your results.
With that said, an ISTJ is above all else, human: if they feel overwhelmed then an emotional response is possible.

Honestly, an ISTJ can be very emotional under the right circumstances. My dad is the quintessential ISTJ and has tested that way several times but he can be incredibly emotionally turbulent.

I have no idea why people generalize traits into types. That plays on the stereotype that ISTJ are unemotional. Contrary to stereotypes, I knew an INTP that was in touch with feelings. She acted like a type 2. Crying over minecraft is a foolish reason to get upset about.

People don't tend to brake down over petty things unless there is a much larger thing weighing on them.

My roommate and my brother are ISTJs, and while I wouldn't call them turbulent, they are both very sentimental. They try to hide it, but they have strong emotional attachments to the people in their lives. My brother does his best to play the typical grouchy ISTJ, but he's affectionate with me, his youngest and favorite sibling. He'll hug me out of nowhere, say "Love you, kid," and steal the drink out of my hand to cancel out the disgustingly tender display.

And my roommate cries at sad movies. And happy movies. She doesn't bawl, but there's a lot of furtive sniffling. There is definitely more depth to ISTJs than they would like you to believe.
