Here are my thoughts:

Moana - ENTP, 7w6, sp/sx. Ne in that she is always searching for more. Ti in that she follows her own logic before anything else. Fe because she seems to have a grasp on dealing with people but not enough to fully immerse. Si because she feels stuck because of past experience and wanting something new. Could possibly be ESTP.
Maui - ESFJ, 2w3, sx/sp. Fe in his ability to work a room. Si in his focus on his past image. Ne in his bursts of quick-wittedness. Ti in quickly giving up on things he can't figure out.
Grandma Tala - ESFP, 4w3, sx/so. Se in her focus on now. Fi because she is always focusing on personal values and shutting out anything that refutes that. Te in her aggressive problem solving style of thinking. Ni in poor planning and lack of preparation. Could be an ENFP.

Those were the only three characters with enough screen time to even type. It would be unfair to type anyone else.
