I make a super good potato salad ;). I normally hate blue cheese, but in this recipe its pretty damn good.

Ingredients:

-1 Bag of Baby Red Potatoes
-Bacon
-Crumbled Blue Cheese
-Blue Cheese dressing
-Dill
-Red Onion
-Green Onion

Instructions:

Cut baby red potatoes in half (or bite sized pieces), boil, & drain
Add blue cheese dressing, bacon, minced red onion, green onion, dill, blue crumbled blue cheese
Mix, & refrigerate till cool.

Enjoy!

fresh fruit sorbet

equipment: blender/vitamix

10-15 frozen berries (fresh, ripe)
2 frozen mangoes
¼ cup fresh squeezed orange juice
5-6 fresh basil

1. place the fruit in the freezer until completely frozen.
2. put frozen fruit in blender or vitamix with ¼ cup of oj.
3. blend slowly. it's done when the mixture has a smooth, creamy texture.
4. add basil last and give it a whirl

the result is light and creamy.

raw, delicious, healthy :)

i love to eat fresh pineapple in summer that's sliced finely with chopped fresh mint mixed through and i also like spinach and strawberry salad.

and vietnamese cold rolls

and i like blonde sangria

^^ Vietnamese rolls are so good & healthy!

The ones I make have spinich, avacado, chicken, rice noodles, and a rolled up fried egg roll wrapper in the middle for extra crunch....they are soooo good!


mmhmm, Ive never thought to use basil in a smoothy...thanks for the idea :).

Lemonade Ice

1- Peel 3lbs of lemons.
2- Place peeled lemons into blender with 1 cup water.
3- Liquefy.
4- Filter juice into 1-quart bottle (should be around one quart).
5- Save in fridge.


1- Add ½-cup lemon juice to blender.
2- Add ¾ to 1 cup sugar to blender.
3- Add ¾-cup water.
4- Add ice to the 3-cup level.
5- Blend until all ice is crushed.
6- Should make two glasess (best if drank through a straw).

this is a good pasta salad using cheese tortelini
-one package cheese tortellini
- kalmata olives
-feta
-grape tomatoes (you could use cherry and cut them in half or chop a normal tomato)
-vinegar based dressing (such as italian)

make tortelini according to package directions, add the olive,feta,tomatoes, and dressing toss to coat put in fridge to marinate. serve cold.

sorry i don't know the measurements as everything is to taste.

Mmmmm, I love sangria....


I've been eating brown rice tabouleh lately for lunch. Easy to make, healthy and refreshing:
6 c. cooked whole grain brown rice
1 1/2 c. chopped cucumber
1 1/2 c. chopped tomato
1 c. chopped fresh parsley
1/2 c. chopped fresh mint leaves
1/2 c. sliced green onions
1/2 c. olive oil
1/2 c. lemon juice
1 tsp. salt
1/2 tsp. freshly ground black pepper

1. Combine all ingredients in large bowl. Toss well and chill.

Yummy Korean Glass Noodles (Jap Chae)

You can eat this hot or cold :)

Ingredients

• 1 pkg. (8 serving size) sweet potato vermicelli
• 1/2 cup reduced-sodium soy sauce
• 1/4 cup brown sugar
• 1/2 cup boiling water
• 3 tablespoons vegetable oil
• 1 teaspoon toasted sesame seeds

*and any veggies, usually onion, korean prepared spinach, onion, mushroom etc...you can add meat to it too :) (beef)

Directions:

Break the vermicelli into small pieces and place in a deep-sided dish. Cover with hot tap water and soak for ten minutes; drain.
Whisk together the soy sauce, brown sugar, and boiling water; pour over the drained noodles; allow to soak 2 minutes.
Pour the vegetable oil into a skillet and place over medium heat. Add the noodles and soy sauce mixture to the skillet and cook and stir until hot, about 5 minutes. Sprinkle sesame seeds over the noodles just before serving.

I had never put blue cheese dressing in before, but you're right, it's a great complement to the recipe. Added a nice flavour; even the hubs liked it, and he really dislikes blue cheese.

My favourite is water. You'll need a glass and a water source. Add frozen water for a special treat.

Here's another nice summer use for brown rice:

Orange Mint Rice Salad
-Brown rice, cooked
-Slivered almonds
-Golden raisins (regular raisins work fine too)
-1-3 oranges, peeled and cut into segments
-Fresh mint, chopped
-A touch of salt and pepper

Mix to taste, refrigerate to chill before eating. Sounds pretty weird but it's yummmmyyyy! I'm eating some right now. :)

I made awesome creamed corn the other day.

Cook a few fresh ears of sweet corn (you can do this in the microwave--I'll tell you how, if anyone's interested). While that's cooking, saute a shallot in some butter. Then cut the corn off the ears and place it in a pan with the shallot. Add some heavy cream. Then throw in some fresh basil. The basil is an unbelievable compliment to the sweet corn--you'll be amazed! Super easy, too.
