This is the first time I have bought meat since Thanksgiving. I use a local butcher/meat processor - since we don't eat nearly the amount of meat we once did, we can stick to the no commercial meats resolution. Costco prime and choice would be the single exception.

Yes I have a chest freezer in my basement.

Lamb tastes like beef but richer, more earthy. It's not gamy - mutton is which is an older sheep. I don't like it but unless you are in Northern KY or somewhere that specializes in it, you'll never see mutton in a store. The lamb I get is from this farm near me and it's young lamb, super tender and very mild tasting.

Crane Dance Farm - LocalHarvest

We make shish kofta and lamb burgers with the ground lamb. I also put it in bolognaise (which is what I got the chicken livers for).

This is a great lamb recipe for people that are just trying it out but I definitely agree with you.

Lamb use to be a really popular meat in the US, it's too bad it went out of fashion. Tiny lamb chops or lamb rib roasts are sooo good.

I've been adding it to spinach and romaine as a salad mix. It gives a good crunch. I also got some butter lettuce for chicken larb but I will throw it in there too. I have cool weather greens coming up so I can quit buying most soon.

I'm partial to the crunch of iceberg as well. It's a good mixing green.
