I am not a big fan of spinach but I should be eating it regularly, as a vegetarian it gives me easy access to a bunch of vitamins and minerals that I could miss by not eating meat, meaning I don't need to overload other foods to meet my daily requirements.

So my aim is to have something I can add to my daily food that includes spinach in a way that I would find it tasty. This seems to hit the mark as something I could make once a week or so then freeze:

Quick Spinach Quiche

Preparation: 10min › Cook: 1hour › Ready in: 1hour 10min
Serves: 8

Ingredients

250g frozen chopped spinach, thawed
1 bunch spring onions, finely diced
4 eggs, whisked
500g cottage cheese
250g grated Cheddar cheese


Directions

1. Preheat oven to 160 degrees C. Lightly grease a 23cm pie or quiche dish.

2. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in spring onions, eggs, cottage cheese and cheddar cheese. Pour mixture into prepared dish.

3. Bake uncovered in preheated oven for 45 to 60 minutes, until eggs are set.
These are great to make in muffin pans - that way they cook a lot faster and you can freeze them and thaw one or two at a time. Egg + any kind of leafy greens + (optional) any kind of cheese + (optional) a bit of milk + (optional) meat/possibly tofu? I even used uncooked swiss chard last time and it worked fine.

I fucken hate food.

I'm bad with time so don't know exactly how long, but for at least 5 years I would feel like shit after most meals, there didn't seem to be any reason, it got worse and worse until I feared food and simply didn't want to eat anything, healthy or unhealthy made little difference so there was no incentive to attempt to be healthy, that's when the habit of rarely eating started, not that I was ever a big eater.

I got fed up and started looking for answers myself after a number of years cause no one else could give me any and spending all weekend sleeping because I was too lethargic to do anything else was annoying, I even went strictly Gluten Free for 6 months thinking cealiac may have been the answer (no beer was a bitch!), worked for a while but didn't last. A random doctor who I saw for nothing related to this suggested insulin may be the issue and sent me off to a specialist for a test, I've never passed a test with such flying colours before, 1 hour after the disgusting glucose drink I was 4 times the insulin level max I should be and I was still going up after 2 hours. So an answer, great.

That was three years ago now.

Part of the whole eat three meals thing is to try to get myself back into the habit of eating regularly, things have improved a lot since the diagnosis of Insulin Resistance as I know what to avoid, but I am still kinda scared of food (thank fuck for good food labeling laws here in Oz!).

So I introduce some nuts and seeds into my diet as a more regular snack, I have these zip lock bags ready made with a handful of trail mix in it I can chuck in my bag each day and hey presto I have something so I can eat more often throughout the day without being unhealthy and therefore take pressure off having to have larger meals.

So first the amazingly delicious seed mix I got (Quinoa, Amaranth, Buckwheat, Linseed, Sunflower, Chia, Pumpkin, Poppy, Almonds, Raisins and Millet) has given me a clear allergic reaction so I have to one by one eliminate which ones I'm fine with.

Now today, after a 3 day headache that pain-killer after pain-killer has no impact on I read that nuts are terrible for those who suffer migraines due to the tyramine in all tree nuts. Maybe my issue is nuts, maybe it's something else, the seed one was a pretty clear reaction but with this one it's less clear so I'm once again back to being scared of eating because it may hurt me.

So fuck food, dinner is off tonight and my limit of 2 protein drink meal replacements is axed.
