I don't know if I've ever read a book that lives up to the lofty designation "changed your life". But here are a few that made me think and may have altered the way I think or act a little bit.
"Walden" by Henry David Thoreau
"A Brief History Of Time" by Stephen Hawking
"Cosmos" by Carl Sagan
"Making Movies" by Sidney Lumet
"Sex, Drugs And Cocoa Puffs" by Chuck Klosterman
"On Food And Cooking" by Harold McGee
"Peanuts" by Charles Schulz (No, it's technically not a book. But I think it's literature.)

Gravity's Rainbow. Hard to explain what it did to me, but it triggered synaptic connections I'd never experienced before.
