Cashew cream
1 cup drained raw cashews soaked for 12 hours
1/2-3/4 cup water
1/2 medjool date
Blend until creamy.
Egg salad inspired salad
1/4 cup diced sweet onion
1/4 cup diced green bell pepper
1 large celery stalk diced
1/2 cup diced granny smith apple
1/2 cup home sprouted adzuki beans
1/2 cup home sprouted mung beans (I don't eat store bought sprouts raw as I don't trust the growing/handling conditions of industrial sprout growers to be safe)
1 small zucchini diced
Dressing
1 cup cashew cream
1 heaping tbsp dulse
1-2 tsp herbamare (depends how salty you want it)
1 tbsp lemon juice
1-2 tsp apple cider vinegar
1-2 tsp soy sauce
1 garlic clove minced
2 tbsp finely minced pickles
1/2 tsp dill
1/2 tsp turmeric (to give it a yellow egg color)
black pepper
Mix together dressing. Toss salad ingredients except dressing together. Just before eating toss dressing on salad mix.

1 medium apple peeled, cored, and chopped
1-2 tbsp extra virgin coconut oil (I like Nutiva)
1/2 medjool date
1 1/2 cups water
