5.85kg Pilsner Malt (2-Row)
150g Acidulated Malt
Mash @66C for 75 mins
Sparge water: 27.5L @72C, add 3/4 tsp gypsum
Boil for 90 mins
20g Pacific Jade @50 mins
30g Riwaka, 30g Wai-iti @20 mins
30g Riwaka, 30g Wai-iti @10 mins
Whirlfloc tablet @10 mins
30g Riwaka, 30g Wai-iti @1 min
2x Safale US-05 @18C, 2 weeks fermentation
Bottle carbonation for 2 weeks
OG 1.051, FG 1.012
Bitterness ratio: 0.892
Colour: 3.5 SRM
