SPs are called the artisans, but wouldn't NPs be more artistic, considering that N is about ideas, hidden patterns, thinking outside the box and S is grounded in reality, consistency and facts?

According to the theory Se isn't about consistency and facts it is about being in touch with physical surroundings and 5 sensations. I can definitely see how this makes the best artists, as art depends on these. Art is not the same as theory.

Possible exception being literature, where Se can excell but so can all the other functions.

Artisan and artist are different things. An artisan is a skilled manual worker who crafts items that may be functional or strictly decorative. An NP can be great at art, any type can be great at art. The reason artisan is the name given to the SP temperament is because they seek to manipulate things in their environment to have an impact. You can't take the names so literally. It is about how they go about things.

You don't have to look far to realise the names are not all encompassing...

Some of the guardians could care less.
Some of the idealists are cynical
And some of the rationals are ridiculous
