    I also am in love with how he's using cooking types from the 1800's to describe how we currently BBQ. Every BBQ I go to takes all damn day because we cook it so slow, etc blah blah.

    Dry ribs are good, but I like sauce myself. Not every smoked meat is BBQ. Bratwurst ain't BBQ.

    Congrats! You must be eating real BBQ. I'm glad to see it's infiltrated and pushing out "Texas" BBQ. Be sure to skip the beef and go for the pork.

    FWIW, current "BBQ" places in Lockhart do cook over high heat. I even saw a show on the Travel or Food Channel where the owner was proudly boastful they didn't take so long to cook it.

    There's a place in memphis called the Bar-be-que shop that has really good dry ribs. Whenever I go their that's what I get. I kinda want to go home just so I can go get a slab. most of the time I like wet ribs, but the dry rub on these ribs are good. I think that's what it's called, never actually paid attention to the name, I just know where it is.


    I've never had texas bbq or been their so I have no opinion on the state or thier bbq. Except from experience pork pwns beef most of the time.
