    I need some chicken salad recipes. I pretty much just do some plain old chicken, mayo, and celery. But Ill be eating it more often, so I need some ideas to make it more interesting.

    You can create interesting variations with onions, garlic, and curry powder, among other things. A nice chunky fresh chicken salad with bits of fresh garlic would be the bomb, I would think. Curried chicken salad is also very good (I've tried it and like it very much). Or if you like you can take it in the other direction (sweet) with bits of apple and nuts. Piece of sweet Vidalia onion aren't necessarily out of place in this mix.

    Also, presentation can vary. You can serve up your chicken salad in a sandwich, you can make a "chicken salad melt" much like a tuna melt, or you can serve it up on a bed of fresh greens. Introduce variations of flavor and texture by subbing in Swiss chard or bok choi for the lettuce, or ditch the leaves entirely and serve up your chicken salad stuffed into fresh bell peppers, tomatoes, or even a sesame pita.

    You can give your chicken salad a middle-eastern flair by adding a little humus or even straight tahini to the mix, or you can take it to Italy with basil, oregano, and grated Romano cheese. Chicken salad is immensely versatile... the sky's the limit for this ironically flightless bird.
