    Based on your preferences, I would advise you to check out some of the Discworld stories by Terry Pratchett.

    Hmmm, some very nice recommendations above so I'd add my support for Sanderson's Mistborn (Check out his latest 'The Way of Kings') and Kay. In addition to the Fionavar Tapestry, Kay writes a lot of 'alternate' Europe stuff and even an alternate China story (Under Heaven)

    Not sure if they will be your cup of tea since the 'Watch' series are in more modern settings, but here are a couple of 'newer' series/authors that I like
    Peter V Brett's 'The Painted Man' (also known as 'The Warded Man') and 'Desert Spear'
    Brent Weeks' 'Night Angel' trilogy
