What's the point of a 'meatless monday' anyway? If you want to eat a vegetarian meals once a week for some reason, then just do so, there is no reason to make it a ritual on a specific day of the week.
I don't eat meat most days anyway. My diet consists primarily of oatmeal, fruit, eggs, salad, and peanut butter. Every couple days I have chicken.

Also, Most of those recipes look gross. Do not want. Oddly though, I have never had polenta. What does it taste like? Anyone here have any good/bad reviews on polenta? Im interested.
