i make some good chili... fairly easy to do. goes great with cornbread. will look for the recipe and post later

2 lbs. ground beef
1 large onion
3 cans drained chili beans (pinto beans will also work)
2 cans tomato sauce
1 can prepared beef stew
1-2 tsp. chili powder (i usually add more)
salt and pepper to taste

1. In a large pot brown beef over medium heat with onion until browned.
2. Drain grease and stir in chili beans, tomato sauce and beef stew
3. Season with chili powder, salt and pepper
4. Cook until simmering

simple and delicious :drool:

Here's one that a starving youth can live on for a week. (No health questions on this one, please.) The initial expense may be a bit much, but it's filling, makes a lot, is quick and keeps very well in the refrigerator.



1# pasta such as seashells, macaroni, raddiatore, wheels, bow ties, etc. White, whole wheat or rainbow.
Small pkg. tortillini stuffed with cheese. I use the rainbow.
10 oz. pkg frozen vegetable pieces. Italian blend, brocolli, cauliflower, etc.

Cook pasta according to directions and after draining add the thawed veggies while noodles are still warm.

Add any/all of the following ingredients as available or desired:

1 can garbanzo beans, drained
Sliced black olives
Sliced fresh mushrooms
Minced onion
Sliced pimiento olives
A handful of sunflower seeds
Marinated artichoke hearts
Fresh chopped spinach
Cherry tomatoes


If you are not vegetarian you can add some pepperoni. Probably pork or chicken would work as well.

Pour your favorite Italian dressing over it and store in refrigerator. Stir once or twice occasionally. In twenty-four hours this will be marinated and ready to eat and eat and eat.

fucking delicious turkey burgers

1 lb ground turkey
1tsbp fresh mint (chopped)
1 tbsp fresh cilantro (chopped)
1 tbsp fresh thyme or 1 tsp dried
1 tbs fresh oregano or 1 tsp dried
1-2 cloves of garlic (minced)
1/4th red onion (minced)
salt and pepper

before starting take out a log of goat cheese to soften

put in bowl combine with hands, make into patties. cook in preheated skillet over medium high heat that has been greased with olive oil. I don't know for how long it will depend on the thickness but until cooked essentially.

when patties are cooked (a lb yields several patties so i cook one and freeze the rest) put them on a plate and toast the buns

add to the softened goat cheese some greek seasoning (I like cavender's the best) maybe a tsp or 2 but to taste. spread that bitch on to one of the buns or go crazy and do both. it's really good if you put on the burger lettuce, tomato slice, and a slice of red onions
you could cook these on the grill but i find turkey burgers on the grill end up being way too dry.

cheese and ketchup for me. i should do this for breakfast some mornings

i either do an egg sandwhich with cheese and ketchup on an english muffin with orange juice to drink or a toasted english muffin with peanutbutter with hot tea to drink. i'm pretty consistent with breakfast.

I like to chuck in cilantro, ground beef, tomatoes, bell peppers, celery, broccoli and all kinds of herbs.

On a side note, I'd like to know how to make carbonara.

put all ingredients in a pan with a lid turn on stove to medium when it begins to pop slowly and steadily turn the heat off (leave on the burner) this might work only on an electric stove. wait til it slows to about 2-3 seconds between pops and move it to a not hot burner let it finish popping (it will still pop a couple more time). it's good i like it better than flavoring it with butter. but you have to use the olive oil. I should get some infused olive oil. and use that.

Ohhhhh, awesome thread, a few weeks ago, I wanted to try my hand at making a Mirepoix mix, it ended up being the best Chicken Noodle Soup I've had.... and I alone gulped the thing in a day @.@.

What is needed:
Crockpot.
Pan to saute vegetables.

Ingredients:
Butter
Mirepoix mix (diced celery, carrot, onion, 1:1:1 or 1:1:2 ratio, can also buy a pre-made one like from Trader Joe's will do if you can't dice.): about 2 whole cups, 4 if you want more vegetables
A piece of chicken (boneless or bone-in is fine, the bones usually contribute to the soup taste)
1 can of chicken stock
A package of your favorite pasta or spaghetti noodle.

Spices Ingredients:
Salt
Crushed Black Pepper
Crushed White Pepper

1: Saute the Mirepoix mix until the onions become brown (or not-so-brown.)
2: Place sauteed Mirepoix mix into the crockpot
3: Pan-Fry the chicken so that the outside changes color slightly
4: Place chicken (with bones if there are any) into the Crockpot
5: Add the can of Chicken Stock into the Crockpot
6: Fill the Crockpot near full with water, adding a little bit of Salt and black/white pepper.)
7: Put Crockpot on high for a few hours
8: Stir every 30minutes-hour
9: Once water starts bubbling, add the pasta/spaghetti, bring the Crockpot to low.
10: Wait ~30minutes to an hour (depending on how you like your pasta/spaghetti)
11: Take the piece(s) of Chicken out to take the bone away from the meat, it should be very easy (very much like pulled pork)
12: Place Chicken back into Crockpot and stir
13: Ready to eat (add more Salt and Pepper for taste.)

Takes between 8-12 hours to make, but most of that time is spent waiting.

I suppose this one might be too simple, but makes for a nice cold drink:


MANGO STRAWBERRY LASSI

INGREDIENTS:
1/2 mango (peeled and diced)
1/2 cup sliced strawberries
1/2 cup plain yogurt
Sugar (to taste)
Water (optional, to reach desired consistency)

INSTRUCTIONS:
In a blender, place the mango, strawberries and some sugar to taste. Add plain yogurt [and water, if you would like to make the consistency of the lassi thinner], and blend all ingredients together. :)

If you want, you can even substitute the mango and strawberries with any other combination of fruits of your choice.

Horchata Recipe from Roy Choi's "L.A. Son"

1 cup white rice, rinsed
4 cups water
juice and zest of 2 limes
one 3-inch stick of cinnamon
2 tablespoons blanched almonds
2 tablespoons roasted sesame seeds
1/2 tablespoon ground cinnamon
1 cup whole milk
3/4 cup sugar

1. Soak rice in water with lime juice and zest, cinnamon stick, almonds and sesame seeds for 1 hour.
2. Blend together and let sit for 3 hours at room temperature.
3. Strain into a pot, place over low heat, whisk in the ground cinnamon, milk, and sugar. Bring to a low simmer. Strain again and chill.
4. Serve ice-cold.
