Depends on the people playing, it can be anything from being creative, to possible PvP if the server allows it.

Most of the game is spent building and surviving. Some people build grand project like huge castles or buildings that resemble real-life buildings. Some people just explore and find villages and temples scattered through the very huge world. If we play on easy/normal/hard mode we have zombies and such we have to protect ourselves against at night time.

If your computer can handle a server, and you have a decent/really good upload speed, you can host quite a lot of people without spending money for a server (except, maybe for the game itself if you plan to log in every so often.)

EDIT: some online images. With some specific enhancements to the server we can make it look pretty cool.
